Leyden - pronounce LIE-dehn - is also known as Komijnekaas or Leidsekaas and is one of Holland's flagship cheeses. It's made of partially skimmed milk with the addition of buttermilk for extra creaminess, and then gets a twist by the blending of cumin. M
