Sbrinz is considered the "Father of Hard Cheeses" that first received its international legal protection for its making in 1957. This raw milk cheese comes in huge 90-pound wheels and, while similar to Parmigiano Reggiano, Sbrinz is made with whole milk rather than skimmed milk. This gives this magnificent cheese a smoother, nuttier and less salty taste. Sbrinz can age gracefully for eight years or more giving the cheese an increasingly graceful and expansive flavor profile and a fine granular texture.

Chardonnay comes from the green-skinned European vinifera grape. The wine is characterized by citrus flavors - particularly limes and lemons, and also tropical fruit, pineapple, dried peaches, nuts, butterscotch. The texture is often described as buttery. Here are some cheeses we enjoy with this tart, fruity wine:
  • Provolone Dolce: Our Provolone Dolce is produced from selected cow's milk in Italy. It is aged for an extended period of time, allowing it to develop a sharp taste and bold character. (8 oz)
  • Tarentaise: From Thistle Hill Farm in Vermont, this slightly spicy, warmly nutty, hard cheese reminds us of a premium quality French Abondance. (8 oz)

Appenzeller is a semi-hard mountain gourmet cheese that looks a little like Gruyere but is sharper and has a more pungent farmyard aroma and a distinctively fruity taste, which lingers for a while on the palate. Originally from the mountain canton of Appenzeller, Switzerland, close to Austria, it is also manufactured in the Swiss cantons of Saint Gallen and Thurgau. Small brown Swiss cows graze on the rich pasture of the alpine forelands and the milk they produce is made into a delicious and full flavored Swiss gourmet cheese, of which the recipe is still kept a secret. Appenzeller's maturation time is 7 to 12 months and usually peaks at around 9 months. Appenzeller has a characteristic light tan color, which comes from continuous brushing with a special mixture of herbs, wine or cider and salt. Cambozola Triple Cream - cow's milk blue-veined semi soft cheese. 1 lb/454 gr, Germany. Cambozola is a mild and creamy blue cheese that is a combination of French Camembert and Italian Gorgonzola. It was developed in Germany during the 1970's. It is made from the same blue mold used to make Gorgonzola. Cream is added to the milk, giving Cambozola a rich consistency. La Tur Cheese - Price per 7oz  LA TUR DELLA LANGA MIX OF COW, SHEEP & GOAT Cheese Cow, Sheep & Goat's milk (30%-30-40%) La Tur is one of my favorite cheeses. The best way to describe it is like butter with an attitude. At the proper temperature and ripeness La Tur Cheese  is soft, smooth and spreadable but still dense with pungent, ripe flavor. It is sold in small 4-inch disks about one inch deep placed in pleated paper like a cupcake. The outside has a light white undeveloped mold and the inside is the color of cream. It goes well with a warm French baguette. We also tried it with two condiments, a Spanish quince paste, Membrillo, and fig jam. The fig jam didn't work. It was not sweet enough to compete with the stronger cheese flavors. The quince paste was delicious though, sweet but not cloying, a little acidic, a little tart. La Tur is a triptych blend of cow, sheep and goat milk. It is pastuerized but at the lowest temperature allowed by law which helps retain some of the flavors of unpasteurized cheeses. It is aged for about two weeks before being shipped around the world. If you can find it buy it. Did I say it was one of my favorites? Yes I did. Pecorino Tartufo is an old style of Umbrian pressed sheep milk cheese. The cheese's buttery nutty flavor is enhanced with the addition of aromatic black truffles giving it a unique signature. Montasio is a pasture-terraced mountain located to the northeast of Venice in the Friuli-Venezia region of Italy. The cheese Montasio was originally made by the monks who occupied the monastery that owned those pastures in the thirteenth century. Today, the cheese is a DOC cheese, which means its properties and production are protected by law. Montasio can now be made legally in all of Friuli-Venezia Giulia and parts of Veneto. Made in large wheels, the flavor of this cheese is nutty, and slightly fruity. Since the mountain milk from which Montasio is made is high in butterfat, the cheese has a richer flavor with hints of butterscotch.
