Taleggio cheese derives its name from the caves of Val Taleggio in the alpine Lombardy region of Italy, where it has been produced since before the 10th century. Possibly one of the oldest soft cheeses, it has a strong smell but its flavour is comparatively mild with an unusual fruity tang. Its crust is thin and studded with salt crystals.
