Montcabrer is a semi firm goat cheese from Catalunya bathed in vegetable oil and charcoal and aged 60-90 days. The rind is greay, as surface mould mingles with the charcoal. The texture is creamy and the sweetness of the milk derives form the Murciana goats. This cheese is earthy, full flavored and slightly tangy at the finish.
