The food of Poland is primarily dependent on the country's soil and climate. A country whose borders have changed dramatically throughout its history, however, Poland has a cuisine that has absorbed the influence of the various people who have lived within them. French, Italian, and perhaps most obviously, Russian flavors and dishes are present throughout Polish cuisine. Despite these influences, the Polish predilection for simple, substantial dishes have remained. This cheese is an example of that preference. Morksi is a semi-soft cheese with a very mild, pleasant flavor. It is not at all complex or intimidating and is, therefore, a safe bet when serving a crowd or for everyday eating. The cheese's smooth texture makes it great for melting, and it is perfect on a grilled ham and cheese sandwich made on Polish-style dark, hearty bread.
